Bananna Molasses Cookies

These delicious cookies are made with molasses instead of sugar, so they are lower in calories, lower in fat, and are great for those avoiding sugar. 

Banana Molasses Cookies 

Ingredients:

  • 1/2 cup buckwheat flour 
  • 3/4 cup brown rice flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/8 teaspoon salt 
  • 1/2 mashed banana
  • 1/2 cup maple syrup
  • 6 tablespoons safflower oil
  • 2 tablespoons blackstrap molasses

Directions:

  1. Preheat oven to 325 degrees F.
  2. In a mixing bowl, stir together both flours, baking powder, cinnamon, ginger, cloves and salt.
  3. In a second bowl, mix maple syrup, vegetable oil, molasses,and mashed banana.  Add flour mixture to brown sugar mixture and stir until mixed. Using a tablespoon, scoop up dough and form nice mounds. 
  4. Place the mounds about 2 ½ inches apart on a greased cookie sheet.  Bake for 13-16 minutes. Let cool for 2 minute on sheet, then transfer to wire rack to cool.
  5. Makes about 18 cookies
