These delicious cookies are made with molasses instead of sugar, so they are lower in calories, lower in fat, and are great for those avoiding sugar.
Banana Molasses Cookies
Ingredients:
- 1/2 cup buckwheat flour
- 3/4 cup brown rice flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon cloves
- 1/8 teaspoon salt
- 1/2 mashed banana
- 1/2 cup maple syrup
- 6 tablespoons safflower oil
- 2 tablespoons blackstrap molasses
Directions:
- Preheat oven to 325 degrees F.
- In a mixing bowl, stir together both flours, baking powder, cinnamon, ginger, cloves and salt.
- In a second bowl, mix maple syrup, vegetable oil, molasses,and mashed banana. Add flour mixture to brown sugar mixture and stir until mixed. Using a tablespoon, scoop up dough and form nice mounds.
- Place the mounds about 2 ½ inches apart on a greased cookie sheet. Bake for 13-16 minutes. Let cool for 2 minute on sheet, then transfer to wire rack to cool.
- Makes about 18 cookies
